Soak 1 cup moong dal for 2-3 hours, grind with ginger, green chilies, and salt. Cook batter on a non-stick pan until golden brown on both sides.

Simmer mixed vegetables in a coconut milk base with ginger, garlic, and spices until tender. Serve hot with steamed rice.
