Kickstart your morning with a protein-packed, iron-rich spinach and mushroom omelette.

– 2 eggs – 1/2 cup spinach (chopped) – 1/4 cup mushrooms (sliced) – 1/4 cup onions (optional) – Salt and pepper to taste – Olive oil for cooking

Wash and chop the spinach and slice the mushrooms. Optionally, chop some onions for added flavor.

Step 1: Prepare the Veggies

Heat a little olive oil in a pan and sauté the mushrooms and onions for 2-3 minutes until softened. Add spinach and cook for another 1-2 minutes until wilted.

Crack the eggs into a bowl, season with salt and pepper, and whisk until the mixture is smooth and well-blended.

Pour the egg mixture into the pan over the cooked vegetables. Let it cook for 2-3 minutes, then flip carefully to cook both sides until golden brown.
