This is the most important step for creating a creamy texture. Peel your bananas and break them into chunks. Place them on a baking sheet or tray in a single layer and freeze for at least 2-3 hours, or overnight.

Once the bananas are frozen solid, add them to a high-speed blender or food processor. Pulse or blend until the bananas become a fine, crumbly powder. This may take a few minutes depending on your blender's power.
